Amazing Chocolate-Coconut Pudding

This recipe is absolutely amazing!   It's good enough to serve after a holiday meal and easy enough to make on a lazy Sunday afternoon.

1 cup unsweetened light coconut milk
1/2 cup unsweetened cocoa powder
2 tablespoons cornstarch
1/4 teaspoon salt
1 1/4 cups unsweetened almond milk
1/4 cup packed brown sugar (replace with honey or maple syrup for a healthier version)
4 ounces semisweet chocolate chips or block chopped
1/4 teaspoon coconut extract
2 tablespoons unsweetened shredded coconut toasted

1) In a bowl whisk together coconut milk, cocoa powder, cornstarch and salt - set aside

2) In a medium saucepan combine almond milk, brown sugar and granulated sugar.  Cook and stir over medium heat just until boiling.  Add coconut milk mixture from step 1.  Cook and stir just until the mixture returns to boiling.  Immeditely redcue heat to low; cook and stir for 2 minutes more.  Remove from heat.  Add chocolate, let stand for 30 seconds.  Add cocounut extract and stir until smooth.

Serve warm or chilled and top with toasted coconut.

I also topped mine off with a little extra coconut milk.  It made it a little runny, but it was absolutely delicious.

Acorn Cookies

I saw these little Acorn cookies somewhere online and had to make some for our Thanksgiving gathering.  Aren't they adorable?

I'm happy to say that they are so simple!  All you need is miniature Nutter Butter cookies, Hershey's kisses, butterscotch chips and peanut butter (creamy) to glue them together.  Delicious!

Flourless Chocolate Cake

Thanks to Serena for sharing such an awesome recipe!

2 cups of almonds ( I soak mine for 24 hours and rinse them once or twice during that time and give um a good rinse before use)
3 eggs
1/2 cup brown sugar
1/3 cup melted butter ( I use coconut oil)
1 tbs vanilla or almond
1/2 tsp salt
1/2 cup boiling water
1/2 cup unsweetened cocoa pwd

~oven 350
~glass baking dish greased with coconut oil ( or whatever you normally use)
~make sure almonds are drained well, add to food processor and grind till fine but not almond butter...may need to stir a few times
~mix boiling water and cocoa pwd till dissolved (I found I didn't need the water boiling just really hot and it works good to use a whisk)
~add above cocoa pwd/water mix, brown sugar, eggs, coconut oil, vanilla, salt to almond meal in food processor. ...mix
~(optional) add 1/2 cup chocolate chips and turn the food processor on again for a minute or two
~pour into pan
~bake 40-50ish minutes
